what are vermicelli noodles?

Sometimes referred to as rice vermicelli to distinguish it from the more pasta-like Italian vermicelli, these noodles are known by several different names. Some may refer to them more generally as rice noodles.

Rice vermicelli noodles are, unsurprisingly, made from rice, but you may also see cellophane noodles and glass noodles under the vermicelli category due to their similar properties. Cellophane or glass noodles are usually made from mung bean or sweet potato starch rather than rice.

Because they are so thin, many recipes simply call for these noodles to be soaked in hot water rather than boiled.
