mung bean glass noodles
Like regular rice vermicelli, glass noodles are very thin and are great for adding to soups, hot pots or stir-fries. Some glass noodles can become clear when cooked (hence, the ‘glass’ in the name), but most will remain slightly cloudy in colour.
Some use vermicelli noodles and glass noodles interchangeably, although glass noodles are particularly popular for Korean dishes like japchae.
